Mama's Crunchy Chewy Granola Bars Recipe

Today is Monday and over at http://www.thriftyfloridamama.net/ that means it is "Make It yourself Monday"
Angie has challenged us all for the month of May to make more stuff ourselves and to skip the fast food and higher-priced convenience foods.
I am taking this opportunity to share with all of you out there my recipe for a great snack and cookie replacement at our home.
Mama's Crunchy Chewy Granola Bars
2 cups rolled oats
1/4 cup brown sugar
1/2 cup ground flax seeds
3/4 tsp of cinnamon
1/2 tsp nutmeg
1 cup whole wheat flour
1/2 cup raisins
1/2 cup shredded coconut
1/2 tsp salt
1/2 cup honey
1 egg
1/2 cup veg. or coconut oil
2 tsp vanilla extract

(you can substitute 1/4 cup of applesauce and 1/4 cup of veg. oil for the 1/2 cup of oil)
preheat the oven to 350 degrees F. Generously grease a 9x13 inch pan.
In a large bowl, mix together the oats, brown sugar, flax seeds, cinnamon, nutmeg, salt, whole wheat flour, raisins and shredded coconuts.
In a small bowl mix together honey, egg, oil and vanilla extract.pour the wet mixture into the dry mixture and mix well.
Pat the mixture evenly into the prepared pan Bake for 20 to 35 minutes or until the bars begin to turn golden at the edges. Cool for 5 minutes then cut into bars while still warm.

This recipe is very versatile, all the ingredients can be found at your local Walmart and even the pickiest of eater will love these bars. Try it for your self and see, and don't forget to head over to Angie's site and see what everyone else is cooking up.

I love granola bars. I've never made homemade ones but I think I will try to make these this weekend.

This recipe sounds like "tres bon!" Bonjour frere & soeur! It's so nice to come across Haitian homeschooler and a christian family into frugal, natural living. I am also Haitian. Although, I'm not a homeschooler (except for in the summer) I have such an interest in it.
